Crossbred vs Fullblood Wagyu What are do these terms mean and how to they impact the quality, taste and most importantly price of my kosher wagyu beef.  It's all about the genetics. Wagyu beef is all about the genetics. Genetics refers to the percentage of DNA that the cattle has that are wagyu vs black angus, or another domestic cattle that is used for breeding purposes. When it comes to Wagyu beef, the terms Crossbred and Fullblood aren't just marketing labels. They describe actual genetic makeup of wagyu cattle. They also help determine the marbling potential, flavor and price.  Fullblood Wagyu Fullblood Wagyu means the animal has 100% wagyu genetics with no crossbreeding in it's lineage. Both parents are wagyu cattle and their genetics can be tracked back to their original bloodlines in Japan. This is the highest quality wagyu you can purchase outside of Japan.  Crossbred Wagyu This is when Wagyu cattle genetics are combined with another cattle breed - most often Black Angus. Crossbred Wagyu still delivers superior flavor and marbling compared to traditional beef, but carries a more robust and beefy flavor profile. Is American Wagyu real wagyu? The hot topic around the American Wagyu industry is it's authenticity and how it compares to it's Japanese older brother, Japanese Wagyu.  The lineage is real, if you know your source All authentic wagyu beef originates from one of the four original bloodlines of wagyu cattle. The most common breed of origination for wagyu raised in the domestic United States is Tajima wagyu  which comes from the Hyogo prefecture, know for the holy grail, Kobe.  The Four Bloodlines The floor original bloodlines of wagyu cattle are: Tajima from the Hyogo prefecture. This is the most well known globally and is most well known from their breeding practices and the instramuscular fat or marbling found in their wagyu. Fujiyoshi from the Okayama prefecture. Which yield a more robust marbling structure. Shimane are from the prefecture that bears their name. These cattle are known to have more moderate marbling and superior genetics. Kedaka from the Tottori prefecture. Are known for their high meat yields during production. Japanese Lineage, Guaranteed At Chu's Meat Market we work with the American Wagyu Association to annually test our wagyu to confirm it's Japanese lineage and authenticity. This process involves taking a center cut ribeye and sending it to a DNA lab for testing. 2 Months later we receive a DNA analysis report that confirms the genetics of the cattle.   Conclusion: Trust your sources At the end of the day your ability to shop for kosher wagyu with Japanese lineage is available to you as a kosher consumer. It's important to develop a relationship with a local kosher butcher or meat market that you trust.

Can Wagyu Beef be Kosher? In today's discussion, we will be looking at the question: "Is Kosher Wagyu Real Wagyu Cattle?" Well, the answer is yes; kosher wagyu is real wagyu cattle raised domestically in the United States. It may come as a surprise to some, but any type of cattle from any region of the world has the potential to be deemed kosher based on a set of criteria evaluated by a rabbi. Why are Wagyu cattle so unique? Wagyu are known for their insane marbling which results in a rich and buttery flavor profile that coats your mouth while eating. This is due to wagyu's genetic predisposition to store higher amounts of fat internally, creating a unique texture and flavor profile. Can Wagyu be Kosher? Wagyu cattle have the opportunity to be kosher just like any other breed of cattle. In order for them to be certified as kosher the esophagus and lungs must be clean of any abrasions which signify different diseases that the cow carried prior to slaughter.  How Does a Rabbi Determine if Wagyu is Kosher? A rabbi will evaluate various factors to determine if wagyu cattle meet kosher standards. This includes ensuring that the cattle are free from certain defects, that they are slaughtered in a specific way, and that the meat is processed according to kosher guidelines.
